New chef takes over kitchens at Monaco’s Prince’s Palace
A new chef has taken over the kitchens of Monaco’s Prince’s Palace, succeeding Christian Garcia after almost four decades.
Cédric Chabaudie officially becomes chef to Prince Albert II from Tuesday 1 September, bringing experience from the kitchens of the French Presidency to Monaco.

Chabaudie trained at the Élysée Palace in Paris, where he notably worked as a sous-chef.
He has also participated in initiatives organised by the Cuisiniers de la République Française and competed in several culinary competitions.
He succeeds Christian Garcia, who joined the Prince’s Palace in 1987 after training at Monaco’s hotel school and working at both the Hôtel Hermitage and Hôtel de Paris.
During nearly 40 years at the Palace, Garcia cooked for several generations of the Princely Family as well as numerous distinguished guests visiting Monaco.
His departure from the Palace kitchens does not, however, mark the end of his work for the Principality.
Garcia has been appointed Personal Representative of Prince Albert II for Gastronomy.
In his new role, he will continue to represent Monaco and organise charity dinners both in the Principality and internationally.
The appointment marks a new chapter for the Palace kitchens, with Cédric Chabaudie now at the helm while Christian Garcia takes on a wider role promoting Monaco’s gastronomy around the world.
