SBM expands sustainable seafood commitment with new Mr. Goodfish partners
Monaco’s SBM has expanded its sustainability efforts, adding new restaurants to the Mr. Goodfish programme promoting responsible seafood consumption.
Monaco’s Société des Bains de Mer (SBM) has strengthened its commitment to sustainable dining, with several new establishments joining the Mr. Goodfish programme.

The agreements were formalised on 2 April at the Hôtel Hermitage, bringing the total number of participating venues across the group to 18.
New signatories include Amazónico Monte-Carlo, Mada One, as well as Limùn and the Hermitage room service.
The Mr. Goodfish initiative, launched in 2010 by European aquariums, promotes responsible seafood consumption by encouraging the use of seasonal and sustainable species.
Participating restaurants receive quarterly recommendations and commit to featuring these options on their menus.
For SBM, the programme forms part of a wider environmental strategy focused on protecting marine biodiversity.
Chairman and CEO Stéphane Valeri highlighted the role of chefs and hospitality professionals in driving change, noting that their involvement helps raise awareness among customers.
In practice, the initiative encourages restaurants to diversify the species they serve and reduce pressure on overfished stocks, while offering diners more sustainable choices.
