SBM to open new signature bar under Hermitage’s iconic glass dome

Monte-Carlo Société des Bains de Mer will open a new signature venue, Bar Gustave, at Hôtel Hermitage in 2026 as part of its ongoing luxury renovation.

Monte-Carlo Société des Bains de Mer is set to open a new signature bar, Bar Gustave, at Hôtel Hermitage beneath the hotel’s iconic Gustave Eiffel glass dome by the end of May 2026, alongside a reimagined winter garden terrace.

Announced by SBM CEO Stéphane Valeri, the project aims to highlight the Belle Époque splendour of the dome through dramatic lighting, creating a striking focal point for both guests and Monaco residents.

The winter garden terrace will also be renovated, providing a “new living space” with valet service and enhanced accessibility, complementing the hotel’s two Michelin-starred restaurants, Pavyllon Monte-Carlo and L’Abysse Monte-Carlo.

Bar Gustave is part of phase two of Hôtel Hermitage’s five-phase renovation, which includes 10 Diamond Suites and 30 new rooms across the Prince Wing, bringing the total redesigned rooms to 84.

The project follows SBM’s successful Hôtel de Paris model, targeting Ultra High Net Worth Individuals and commanding higher room rates post-renovation.

Valeri hopes Bar Gustave will become as iconic as the American Bar at Hôtel de Paris, transforming the underutilised architectural jewel into a signature destination in Monaco’s luxury hotel scene.
